FOR THE CRUST
1 1/2 cups all purpose flour
1/2 cup of ground almonds
1/2 tbsp. of almond extract
1/2 cup granulated sugar
1 1/2 cups sweetened flaked coconut, toasted
1 1/2 sticks butter, chilled and cubed
1/s tsp. lemon zest

FOR THE FILLING
1 1/2 cups granulated sugar
4 large eggs
2 tbsp. lemon zest (I add more it I have it)
1/2 cup fresh lemon juice
2 tsp. baking powder
1/3 cup confectioners' sugar

FOR CRUST
Heat oven to 350º Line 13"X9" baking pan with aluminum foil, leaving 1" overhang on all side. Lightly grease the foil.
Combine flour,Nuts,sugar and 1 tsp. salt in processor. Chop until all is smooth. Add coconut and butter. Process until a fine meal forms and begins to clump; press into pan. Bake 20 min or until edges are golden.
FOR THE FILLING
Combine first 6 ingredients and a pinch of salt in processor, blend until smooth. Pour over hot crust.
Bake 20 min. or until just set. Let cool dust with confectioners' sugar.

I got this out of a magazine and tried it. It did not have the nuts or the extract but I thought it need it. Joe will not leave me alone about these, if it was up to him I would make this every week!
