6 cups water
2 pound potatoe
1 large onion
1 pound leeks
1 tablespoon butter
3 cups milk add milk
Salt and Pepper

Directions:
Directions:
Peel and chop potatoes roughly. Slice onion. Wash leaks well, cut into slices.heat butter in a heavy pan, add leeks, onion and potatoes, cover and cook gently 15 to 20 minutes. Stare from time to time. Do not brown vegetables. Add the water and seasonings, bring to boil, simmer 20 minutes. Remove from heat. Pass through sieve or blend till smooth. Return to pan, add milk, adjust seasonings and heat thoroughly.
