Tortilla
2 cups flour
1 cup cornmeal (yellow or white)
2 eggs
2 1/3 cup water
1 tsp. salt

Ground Beef
2 lbs ground beef
1 onion
2-3 cloves garlic
1 tsp. cumin
1 tsp. salt
1/4 tsp. pepper

Tomato Sauce
28 oz can cubed tomatoes
1/2 onion
1 tsp. oregano

Sour cream
Cheese
Lettuce shavings
Directions:
Directions:
Whisk tortilla ingredients together in a bowl and let sit for 10 minutes. With a bent spoon and a cast iron pan make tortillas one at a time. When tortilla is ready to turn, flip it to another pan. When it is ready to take off this pan, place it on a kitchen towel and place one on top of the other when they are done. You may need to add more water to the tortilla batter as it sits to make a little thinner.

Brown the ground beef in a flying pan, cooking with 1 diced onion and adding garlic and 1 tsp. cumin. Drain juices and put in the fridge and let set and harden. Remove fat on the top and then add some of the remainer back to to the ground beef to moisten.

Open up the 28 oz can tomatoes, add 1/2 diced onion and 1 tsp. oregano for the tomato topping.

Have bowls of sour cream, lettuce, and grated cheese for toppings.

This is a family favorite and Grama Neal's signature dish. Most of us already have the recipe and know how to make it. Serve with the Spanish rice recipe and refried beans recipe to make a full meal.
