5 lbs Russett or Red Potatoes, diced
1 Medium Onion, finely chopped
5 Stalks Celery, finely chopped
6-8 Sweet Pickles, finely chopped
6 Eggs, Chopped
1-2 c. Mayonnaise
1-2 T. Yellow Mustard
Sweet Pickle Juice, to taste
Sugar, to taste

Directions:
Directions:
Boil potatoes until tender, peel or unpeeled, dice and put in large bowl.
Boil eggs, when done peel and chop, add to potatoes
Dice onions, celery and sweet pickles, add to potatoes

Dressing:
Mix together mayonnaise, mustard, add enough sweet pickle juice to make a medium consistently. Add a couple of pinches of sugar to taste (if you like it sweet add more, if not so sweet add less)

Add dressing to potato mixture. Mix thoroughly. Refrigerate and serve cold.
