3 Quarts freshly popped corn (about 1/2 cup unpopped)
1 c roasted cashews
1 c pecan halves
1 c macadamia nuts
1 c firmly packed brown sugar dark
1/2 c light corn syrup
1/2 c butter
1/2 tsp salt
1 tsp vanilla extract
1/2 tsp baking soda

Prepare large pan, coat with butter. Mix the popcorn and nuts Can place in heating oven while making the glaze
In large heavy saucepan, over med heat combine the sugar, corn syrup, butter and salt. Bring to a boil, stirring constantly until sugar dissolves. When dissolved boil for 4 minutes WITHOUTstirring . Remove from heat and quickly stir in vanilla and soda, stir, this will foam up and when you have stirred up until same color, gradually pour over the popcorn. Stir popcorn until evenly coated . Bake until dry, about an hour, Stiring occasionally, I stir every 15 minutes, sometimes this takes more than an hour. Pour out onto waxed paper, cool and break into clumps. Store in airtight container at room temp ro up to 1 week. It wont last that long...

I went to a cooking class at Sur La Tab in Kirkland, in the late 90's, Great cook, I love many of her recipes. This though, I make every xmas and share with family and friends, Of course I spend a weekend making many batches and I order the nuts from Sunnyland farms, 12 lbs. Heavenly mix it is called.
