1 1/2 c. peanut oil (any kind)
4 eggs
2 cups sugar
1 small can crushed pineapple and juice
2 cups grated raw carrots (fine)(I sometimes use 1 small can baby food carrots and 1 c. grated carrots)

Icing:
1 3-oz cream cheese
2 T. vanilla
1 stick butter
Powder sugar to spreading consistency

Stir together
2 1/2 c. flour
2 tsp cinnamon
1 tsp soda
1 c. nuts (optional)
Mix in the above mixture, stirring well. Bake 1/2 hour at 350 degrees. Use a very large pan (jelly roll pan size)
