Ingredients: Eggs- as many as you need for the size of the group Hollandaise sauce packets English Muffins-as many as you need Canadian Bacon as needed for size of group.

Directions: |
Directions:Make hollandaise sauce per directions on packets. Add lemon juice or curry powder as needed. Pour this sauce into thermal containers. Set aside.
Toast English muffins and put into oven to keep warm until needed.
Heat Canadian bacon in the oven or microwave and keep warm until needed.
Poach eggs when ready to get started. Use large frying pan or 2-3 frying pans as needed. |

Notes: This is great for a large brunch. Particularly good for the Michigan-Ohio State football game. Prepare all ingredients ahead of time and keep the hollandaise sauce hot in thermal coffee pots or carafes. Borrow some if you need to. You can poach eggs ahead of time if you want, but I usually just stand there and poach in large batches when ready to start serving. Get a production line going for plating and serving. Sprinkle with a touch of paprika or curry before serving.
Serve with fresh fruit salad, and lots of champagne, mimosas, bloody mary's, or fresh juices.
