2 c. cubed fully cooked ham
1 1/2 c. dry split peas, sorted
1 c. chopped onion
1 c. chopped celery with leaves
1 c. chopped carrot
2 tbsp. snipped fresh parsley
1/2 tsp. dried thyme leaves
1/4 tsp. pepper
1/2 tsp. salt
4 c. chicken broth
2 c. water

In 4-6 qt. crockpot, combine all ingredients. Cover and cook on low for 10-12 hours or on high 4-5 hours. Just before serving use a potato masher to mash some of the peas in the soup for a thicker consistency.

NOTE: Split peas should soften just fine in this amount of cooking time.
