1 c. white corn syrup
2 c. sugar
1/2 c. water
1 pkg. (2 c.) raw Spanish peanuts
2 T. butter
2 tsp. vanilla
2 tsp. baking soda

Directions:
Directions:
Prepare a well buttered pan, at least 15 1/2 x 10 1/2 x 1 inch

Combine syrup, sugar, and water in a saucepan. Bring slowly to a boil (230º F) using candy thermometer. Add peanuts and continue to cook to 300º F, stirring constantly. Remove from heat. Add butter, vanilla, and soda. Stir quickly until blended, being careful to allow the soda to make bubbles in the brittle. Quickly pour into the well-buttered pan.

Once cool, remove from pan and place in a large paper bag, and hit with something to break into desired size pieces.

Makes 1 1/2 lbs.
