2 Ibs potatoes (I like Yukon Gold-about 6 medium potatoes)
3 tablespoons butter
3 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups milk
1/4 cup onion, finely chopped

Directions:
Directions:
Preheat oven to 350º
Peel potatoes and cut into thin slices
Melt butter and stir in flour, salt and pepper
Cook on low heat, stirring constantly, until mixture is smooth and bubbly
Remove from heat and add milk
Bring to a boil, stirring constantly, and boil 1 minute
Fill 2-quart casserole with layers of potatoes, onions and sauce, in that order
Finish with a layer of potatoes and all your remaining sauce
Cover and bake for 30 minutes
Remove cover & cook for an additional 60-70 minutes until potatoes are tender
