1 loaf whole grain bread
1 bunch scallions
1 bunch basil leaves
1 medium cucumber
1 lemon
1 small container pitted black olives
pine nuts
3/4 pound raw, peeled and deveined large shrimp
olive oil
vinegar
salt
black peppercorns

Directions:
Directions:
soak 3 lg slices whole grain bread in small amount filtered water, cut into cubes, place in mixing bowl
slice 4 scallions and add to bowl
chop up fresh basil leaves, add to bowl
peel and cut cucumber into cubes, add to bowl
cut pitted black or greek Kalamata olives in half, add to bowl
add salt and freshly ground black pepper, mix well
4 tbs olive oil
2 tbs vinegar
add the shrimp, lemon juice and 1/4 cup pine nuts
