2 T dry mustard
2 T Whole thyme leaves
1/2 cup dry sherry
1/2 cup soy sauce
2 cloves garlic minced
1 t ground ginger
1 ( 4-5 lb.) pork loin roast, boned, roller and tied
1 (10 ounce) jar apricot preserves or jelly
1 T soy sauce
2 T dry sherry

Directions:

Combine first 6 ingredient in a shallow dish stirring well. Place roast in dish,
cover and marinate 3 to 4 hours in refrigerator turn occasionally.
Remove roast from marinade and place on a rack in a shallow roasting pan.
Insert meat thermometer at an angle into thickest part of roast. Bake uncovered at 325 degrees until thermometer registers 170 degrees. (2 1/2-3 hours total cooking time.) Combine preserves, 1 T soy sauce and 2 T sherry in a small sauce pan. Cover over low heat and stir occasionally until preserves melt. Serve with sliced roast.
