½ pound boiled mashed potatoes
2½ ounces flour
3 tablespoons melted butter or bacon drippings
½ teaspoon salt

Directions:
Directions:
Mash the potatoes well, add the melted fat and salt, then as much flour as the potatoes will absorb without becoming too dry. This depends on the type of potato used. Turn out onto a floured surface and roll until they are ¼ inch thick, then cut into circles, then into quarters. Prick all over with a fork and cook either on a hot griddle or in a heavy pan, which has been lightly greased. Turn over to cook the other side.
Makes 3 large scones or 12 quarters or farls.

VARIATION:
To the above mixture add 4 ounce grated cheese and 2 well-beaten eggs. Shape into small round cakes, dip in breadcrumbs or flour and fry on both sides until golden. Makes about 12 cakes. These are called Cheese Potato Cakes.
