1 large can of Dole chunks or 1 medium fresh pineapple
3 lb spare ribs (side ribs)
1/4 cup flour
1/4 cup soy sauce
1 1/2 tsp salt
1/4 cup cooking oil
1/2 cup brown sugar
1/2 cup wine vinagar
1/2 cup water
between 1/2 to 1 cup pineapple juice
11/2 tsp ginger

Directions:

Cut ribs into large cubes of two or three. Combine flour, soy sauce, and salt and spread mixture thinly on both sides of ribs. Let stand at room temperature for 30 minutes.

Heat oil in a large heavy duty skillet/electric frying pan. Add ribs, a few pieces at a time and brown well on both sides. Lift pieces out as they brown. Return ribs to pan when all browned.

Combine sugar, vinegar, water, ginger and pineapple juice. cover tightly and simmer until ribs are very tender, about an hour. Turn ribs occasionally

Add remaining cubes of pineapple and heat. Serve over rice
