Jumbo Blueberry Muffins Recipe

3 cup flour
4 tsp baking powder
1/2 tsp cinnamon
2 eggs
1 cup sugar
1 cup milk (or buttermilk)
1/2 cup canola oil
1 tsp vanilla
1 1/2 cup fresh or frozen blueberries

Directions:
Directions:
1. Preheat oven to 425º. Spray muffin tin with your choice of non-stick spray and set aside.
2. In a large bowl, gently toss together flour, baking powder, salt and cinnamon. Mix until all dry ingredients are combined. Set aside.
3. In a medium bowl, whisk together eggs, sugar. Mix in milk,oil and vanilla. Mixture will be pale yellow. Fold wet ingredients into dry ingredients and mix by hand. Avoid overmixing. Gently mix until all the flour is off the bottom of the bowl and no pockets of flour remain. The batter will be very thick. Fold in blueberries.
4. Pour batter into muffin tins, filling to the top. Top with sugar. Bake at 425º for 5 minutes. Reduce heat to 375º and bake 20-25 minutes. Cool 10 minutes.
