Ingredients: 1 1/2 cups flour 1 T sugar 1/2 tsp baking powder 2 cups milk 2 T butter (melted) 2 large eggs 1 tsp vanilla
Filling:
2-3 cooking apples 2 T butter 1 cup apple juice 2 T sugar 1/2 tsp cinnamon 1 tsp cornstarch (rounded), dissolved in warm water
Powdered Sugar (if desired)

Directions:Mix all ingredients in a bowl; then beat with a wire whisk till smooth. Batter will be thin.
Use 2 fry pans to cook crepes- if you wish, or keep warm in low oven. Use a little butter in the pan, heated over medium heat. Each crepe uses about 1/4 cup batter.
For Filling: Pare & thinly slice 2-3 cooking apples. Poach in a medium saucepan with 2 tablespoons butter, 1 cup apple juice, 2 tablespoons sugar and 1/2 tsp cinnamon until apples are tender but hold their shape. Mix 1 rounded tsp cornstarch into a little warm water and stir into the hot mixture. Cook slowly until thickened. Try and not let the juices boil down to much. Seve at your desired thickness & tenderness.
Assemble: Fill crepes with apples & sprinkle with powdered sugar. |

Notes: Cooking Apples: Tend to be larger, can be tarter. Generally have firmer flesh that does not break down when cooked or baked. Some suggested apples: Granny Smith is a classic, also Fuji, Winesap, Honeycrisp, Gala, Cortland and Empire apples.
