1 lb. ground beef
½ cup chopped onion
½ cup chopped green pepper
½ tsp. salt
1 pkg. scalloped potato mix
16 oz. can kidney beans
16 oz. can chopped tomatoes
4 oz. can mushrooms
½ tsp. chili powder
1 cup hot water
1 tbsp. poppy seeds (optional)
Grated Parmesan cheese (optional)

Directions:
Directions:
Combine beef, onion and green pepper in skillet and cook on medium until beef is browned and crumbled. Drain fat. Stir in remaining ingredients except Parmesan cheese. Mix well and cover. Reduce heat and simmer 45 min. Sprinkle each serving with Parmesan (optional).
