Cracker Dumplings:
1 box of saltine crackers (grind fine using a food processer or blender)
1 ½ cup flower
4 eggs (beaten)
4 cups milk

Soup Recipe:
1 Stewing Hen or leg quarters, cut up
1 large onion, diced
Paprika seasoning
Salt & pepper to taste
Dash of Red Pepper (optional)
Carton of Half and Half

Cracker Dumplings:
Mix ingredients together in a large bowl. Using a small spoon, scoop up small amounts of the mixture and drop into boiling water. Boil dumplings in large pan of boiling water for approximately 5 minutes. You can test them to make sure they are getting done by cutting into one.

Soup Recipe

Brown chicken on both sides in a small amount of oil. Sprinkle lots of Paprika on each piece of chicken, enough to make the chicken red in color. Keep turning chicken and sprinkling with the Paprika. When you’ve turned the chicken over for the 2nd time, add your onions. When they are browned a little, remove chicken & drain as much of grease as you can. At this time, add more paprika and enough water to either fill Dutch oven or larger pan (whatever is needed). If you have a larger pan, then fill it ¾ full & cook on medium heat till chicken is tender enough to remove meat from bone. Remove chicken from pot with a slotted spoon to cool for removal of meat. You might want to skim the grease from the liquid at this time again. Make a thickening now & add to liquid to make a medium thickness while still hot. Let cool down enough for adding of ½ & ½ so it won’t curdle. Now add dumplings & Simmer for about 10 mins. It should be ready to eat. If broth is not flavorful enough, you can add chicken bouillon or 1 can of chicken broth. Enjoy!!!
