1 T Olive Oil
1 # Boneless, Skinless Chicken Breast (cut into cubes)
Salt & Pepper
1/4 Cup Diced Onion
1 Clove minced Garlic or 1/4 tsp Garlic Powder
1 Cup White Rice (not cooked)
2 Cups Chicken Broth
4 Cups Chopped Broccoli Flourets
1/2 tsp salt
1/4 tsp pepper
1 1/4 Cups Shredded Cheddar Cheese (optional)

Directions:
Directions:
In a large skillet over medium heat, add olive oil and chicken pieces. Sprinkle with salt and pepper and cook about 5-6 minutes until chicken is cooked throughout. Remove from pan and set aside. Reduce pan heat to medium low and add onion and garlic. Saute till tender. Add dry rice and continue to saute a minute or two. Pour in the chicken stock and simmer with a lid on the pan for about 15 minutes. After the pan mixture has been cooking for about 8 minutes add the broccoli and continue cooking with lid on. This will steam the broccoli. After the rice is done add salt, pepper and chicken. At this point you may add the cheese, cover and cook till cheese melts.
