1 3/4 c. flour
1 tsp.baking soda
1/2 tsp. salt
1/2 c. unsalted butter at room temperature
1 c. sugar
1 egg
1 c. apple butter

Cinnamon Cream Cheese Frosting:
8 oz. cream cheese at room temperature
1/4 c. unsalted butter at room temperature
1 tsp. vanilla
1 1/2 tsp. cinnamon
2 - 3 c. powdered sugar

Directions:
Preheat oven to 375º. Line muffin tins with cupcake wrappers. Whisk together flour, salt, and baking soda. Cream butter and sugar till fluffy, then add egg and beat well. Stir in dry ingredients, then apple butter. Fill muffin cups 3/4 full and bake for 20 minutes.

Frosting: Mix cream cheese and butter till smooth. Add cinnamon and vanilla. Add sugar until desired consistency is reached.
