2 c all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt

1 1/2 c mashed, very ripe bananas
1/4 c milk

1/2 c butter or margarine, softened
1 c sugar
2 eggs
1 tsp vanilla

1 T sugar
1/2 tsp cinnamon

Bake at 375º for 15 - 20 minutes
Makes 12 muffins

1. Butter a 12 cup muffin tin
2. Mix flour, baking powder, and salt. Set aside.

3. In a large mixing bowl, cream butter and 1 c sugar until fluffy and light
4. Add eggs, one at a time, creaming with butter and sugar
5. Beat in vanilla

6. Combine bananas and milk

7. On low speed, stir the flour into the egg mixture alternately with the bananas, until just combined
8. Spoon batter into muffin tins

9. Mix 1 T sugar and cinnamon
10. Sprinkle over muffins

11. Bake at 375º for 15 – 20 minutes, until a toothpick inserted in the center comes out clean
12. Cool in pan for 5 minutes
