2 ripe avocados
1/2 tsp. Kosher salt
1/3 tsp. minced garlic
1 T. fresh lime or lemon juice
2 T. to 1/4 c. minced red onion
1-2 serrano chilies, stems and seeds removed, minced
2 T. cilantro (leaves and stems), finely chopped
Dash pepper
1/2 ripe tomato, seeds and pulp removed, chopped (optional)
Tortilla chips

Cut avocados in half. Remove seed. Scoop out avocado from peel. Put in mixing bowl. Using a fork, mash avocado. (Don't overdo it. The guacamole should be a little chunky). Sprinkle with salt and lime or lemon juice. Add onion, cilantro, pepper, and chilies. Start with half of a chili pepper and add to desired degree of hotness. Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready to serve. Add tomato just before serving.
