6 lasagna noodles
1 jar Paul Newman's marinara sauce
Kite Hill ricotta
1 box frozen spinach (or, fresh)
1/3-1/2 pkg Quorne vegan meat substitute crumbles.
1 small onion
1/2 green pepper
1/2 tsp chopped garlic

Cook lasagna noodles until soft, drain

Steam/cook spinach - squeeze out excess water.

Sauté chopped onion and green pepper until softened.
Mix together with Quorke crumbles, chopped garlic and enough marinara sauce to create a consistency thick enough to layer on top of the noodles.

Spray oil a small cassarole dish and add enough marinara sauce to the bottom to cover.

Make lasagna noodle roll ups by layering spinach, 'meat' mixture topping, and ricotta.

Roll up carefully, and place, seam side down in cooking dish.

Top with remaining marinara.

Bake at 375 until heated through and bubbly.
