2 Cups Semi Sweet Chocolate Chips
1/3 boiling Water
2 Tbl instant coffee
5 Egg Yolks
5 Egg Whites
4 Tbl soft unsalted Butter
3 Tbl Brandy
pinch of salt

Directions:
Directions:
Put chocolate chips in Cuisnart and process for 5 seconds.

Add instant coffee to boiling water, stir to dissolve. Pour liquid (use the feeding tube) slowly and continue to process.

Check to make sure the chocolate mixture is smooth. Add egg yolks one at a time, then brandy, then butter and salt.

In a separate bowl beat egg whites until stiff, then fold in chocolate mixture. Fold gently.

Hint: first add a little of the whites to the chocolate to lighten the texture and then add the rest of the whites.

Chill 3-4 hours before serving. Add whipped cream on top.

Options: Chocolate Orange Mousse use 3 TBl orange flavored liqueur; Hazelnut Mousse use 3 Tbl Frangelico and top with crushed Hazlenut.

The best Chocolate Mousse! downside is you need a food processor. But then you don't need to use a double boiler. I am not good with handling "tempering" chocolate so this works for me.
