One whole chicken cut into 8 pieces or
Eight chicken thigh
1 can of Coke
2 pieces of ginger grated
4 cloves of garlic smashed
1 C of soy sauce (dark preferred but light ok)
1 C rock sugar or half a cup of regular sugar
2 Tbl chinese cooking wine (sherry, mirin, all ok)
2 Tbl white rice or red wine vinegar
1 tsp Chilli powder
1 bunch of green onion chop

Directions:

I prefer using chicken thighs. Rinse, take skin off, and dry.

Heat oil in pot, put in chicken, fry for 5 minutes. Put in garlic, ginger, stir.

Put in wine, coke, soya sauce, sugar, chilli powder, and vinegar. Stir come to boil.

Turn heat to low, flip the chicken to the other side, make sure the liquid covers the top of the chicken, put in green onion (green and white).

Cook for 30 minutes. Check check to make sure there is sauce, if not add some water.

Before serving adjust for salt. Serve with rice.

This a family favorite. I first learned how to make this dish from Auntie Rhoda. I have made some alterations to the recipe to suit our taste.
