1 tsp vanilla extract
2 tsps. almond extract
2 sticks butter or oleo
2 cups sugar
3 eggs
3 cups flour
1 tsp baking soda
1 cup chopped nuts
1 pint sour cream
1 cup maraschino cherries, coarsely chopped

Directions:
Directions:
Preheat oven to 350º and grease tube pan. Cream butter; add sugar gradually and beat well. Add eggs one at a time, beating well after each addition. Add baking soda to the sour cream and then add to creamed mixture, mix well. Add flour gradually, mixing only until combined. Add cherries and nuts and spread mixture evenly in tube pan. Bake for 1 hour. Can be frosted with cream cheese frosting, whipped cream frosting or buttercream frosting.

This was a favorite request for birthday cakes and brings back so many memories. This is a cake that even though it has more of a coffee cake like texture can be made lighter by not over-beating. Also very versatile as far as frostings that go well with it.
