1 cup all purpose flour
1 cup quick cooking oats
1 cup packed brown sugar
1/2 tsp salt
1/2 cup shortening ( I use coconut oil now)
2 1/2 cups fresh or frozen blueberries(do not thaw)
1/4 cup sugar
Whipped cream or vanilla ice cream

Directions:

In a large bowl, combine the flour, oats, brown sugar, and salt. Cut in shortening or coconut oil until crumbly. Press half the mixture in a greased 8 in. Square baking dish. Bake at 350 degrees for 10 minutes. Combine the blueberries and sugar. Sprinkle over crust. Top with remaining oat mixture. Press down gently. Bake 35-40 minutes. Serve warm with whipped cream or a scoop of vanilla ice cream on top.
