2 blocks cream cheese
8 oz smoked salmon (you can use canned salmon but the packaged smoked salmon is way better)
1/4 chopped onion (sweet or white)
1/2 c chopped roasted red peppers (reserve 1/4 for outside)
1/2 c chopped green onions (reserve 1/2 for garnish)
crackers for serving

Directions:
Directions:
Mix all ingredients and form into ball (or 2 smaller ones) and wrap in plastic wrap and refrigerate at least a couple hours. Before serving roll cheeseball in reserved green onions and roasted red peppers. Serve with durable crackers of choice. I prefer pretzel chips or wheat thins, but also is good with mini sweet peppers.
