5 Cups Green Tomatoes, pureed
1 large or 2 small boxes of strawberry or raspberry flavored gelatin
4 Cups Sugar

Directions:
Directions:
In stock pot, bring to boil tomatoes and sugar; boil for 15 minutes.
Be sure to stir often so it doesn't burn.
Remove from heat.

Skim off foam.

Add gelatin and mix well.
Pour into jelly jars and seal.

Makes 6 cups -or- 3 pints

I used to label this Mock Strawberry Jelly so my boys (Mike & Chris) wouldn't know it was made from green tomatoes. Several years later they would no longer eat it because they figured out and thought it was disgusting to hide green tomatoes in jelly.
