3 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
3/4 c. soft butter
1 1/2 c. sugar
2 eggs
1 tsp. vanilla

Filling:
1 pkg. (6 oz.) dates - pitted and chopped
1/2 c. sugar
1 tsp. lemon peel grated
1/4 c. lemon juice
1/2 c. chopped walnuts

Sift flour with baking powder and salt. Set aside. In large bowl beat butter, sugar, eggs, and vanilla till fluffy. Gradually stir in flour. Mix until smooth. Form dough into a ball and wrap in wax paper. Refrigerate till ready to use.

In small saucepan combine dates, sugar, and water. Cook, stirring often, over medium heat until thickened. About 5 minutes. Remove and add lemon peel, juice, and nuts. Cool.

On lightly floured surface roll dough one part at a time 1/8" thick and cut in circles. Spread filling on cookie dough and cover with another cookie circle. Seal edges with floured fork and prick center of top. Bake at 375º for 10-12 minutes on greased cookie sheet.
