9 inch baked pie shell

Filling:
1 cup sugar
4 tbsp. dry strawberry jello
3 tbsp. corn starch
1 cup water

approx. 1 pint strawberries
confectionery sugar
cream cheese optional
whipped cream

Directions:
Directions:
Bake 9 inch pie crust and cool. Sprinkle bottom with confectionery sugar*. Cut tops off strawberries and set cut side down into crust.

To make filling, mix sugar, dry jello, corn starch and water. Bring to boil. Let boil for three minutes, stirring often. Cool filling and pour over berries. Serve with whipped cream.

Note: *Lightly prick bottom of unbaked crust with fork to keep air pockets from forming while baking. I then lightly set an aluminum pie plate on top of crust for first half of baking...this helps keep bottom of crust from lifting or sides from sliding down side of pan. Remove after first half and then finish baking till done. Let cool.

If four stars is the highest I could rate this, I'd give it between five and six!!! So good!
Sprinkle bottom with confectionery sugar before placing strawberries onto crust, making sure to fill in any holes from fork with the sugar. An alternate way to make is to spread a thin layer of cream cheese whipped with a little confectionery sugar on bottom, then top with berries...be careful spreading...sometimes use fingers to lightly spread out onto bottom so crust doesn't break.
Since I use a deep dish pie plate, I usually make 1 1/2 times the amount of filling in recipe to make sure I have enough to cover berries. Any extra I just mix with extra berries and eat!! This is Mother's recipe...always LOVED it. One of my favorites. ** DELICIOUS.
