1 cup sugar
1/2 cup shortening
1 egg
1/4 tsp salt
3/4 cup milk
3 1/2 cups flour
2 tsp baking powder

Filling:

1 cup raisins, chopped
1 cup boiling water
3/4 cup sugar
1 T flour
2 tsp vinegar
1/4 tsp salt

Directions:
Directions:
Cream shortening, sugar and egg. Stir in alternately milk and sifted dry ingredients. Roll out on a floured board to a thin sheet. Cut into rounds. Put a tsp of filling on half the round. Place the other rounds on top, pressing the edges together to prevent escape of juice. Bake at 400º until brown.

Filling: Blend sugar and flour; add raisins and water. Cook until thickened. Add vinegar and salt. Cool before spreading.

Amber Capron ( my grandmother), made these every year for my dad on his birthday. She would send them in the mail. My sisters and I try to carry on the tradition for my dad. This is a well loved recipe.
