2 c. flour
2 c. sugar
1 sm. can crushed pineapple
4 eggs
1 tsp. salt
3 c. grated carrots
1 1/2 c. oil
2 tsp. soda
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. vanilla

Frosting:
1 c. chopped pecans
1 box powdered sugar (16 oz)
1 8oz pkg of cream cheese
1 stick butter
1 tsp. vanilla

Directions:

Combine dry ingredients. Beat in egg and oil, pineapple, carrots, nuts and vanilla.

Bake 300ºF in a greased and floured tube pan for 45 min or until done.

For layered cake, bake in three 9" pans at 350ºF for 30 min or until done.

Frosting:
Blend cream cheese and butter together. Add sugar, vanilla and pecans. Mix well. Add milk if necessary to spread.

Top with icing when cooled. Spread in between layers, if layered.
