1 Cup Oil
2 Cups Sugar
2 Cups Zucchini, grated and drained
2 tsp. Vanilla
3 Cups Flour
1/4 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Salt
3 tsp. Cinnamon
1/2 Cup Currants

Directions:

Preheat oven to 325º

Grease and flour pans.

Mix all ingredients with mixer.

Bake: 2 Bread pans: 1 hour -or-
6 Small loaves: 45-50 minutes

This is another one of our Christmas favorites. It's also an opportunity to savor our summer zucchini all year round. We simply grate our garden grown zucchini and freeze it in 2 cup portions, so it just needs to be thawed and drained to be ready to use.
