"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Sprinkle yeast over 2 cups warm water with a pinch of sugar. When it starts to foam, add the remaining 3 cups warm water, oil, honey, and salt. Add 5 cups whole wheat flour. Mix. Let this set till double. Will be very wet. Now add whole wheat flour 1 cup at a time until you have a nice dough that is not too sticky. This will depend on how much humidity is in your air. Usually up to 10-12 cups. If it's too stiff, your bread will be tough. Let rise until double. Shape into loaves, usually 3 to 4. Let rise till double. Bake at 350 for 40 minutes. Remove from bread pan and let cool.
