1 Cup Oil or Applesauce
3 Eggs
2 Cups Sugar
1 tsp. vanilla
3 Cups Apples, diced
3 Cups flour
1 1/2 tsp. Cinnamon
1 tsp. Baking Soda
1 tsp. Salt
Optional: 1/2 Cup nuts, chopped

Directions:
Directions:
--Preheat oven to 300º
--Grease and flour pans.

--With mixer combine oil, eggs, sugar and vanilla.
--Sift flour, cinnamon, baking soda and salt.
--Add dry mixture to oil mixture gradually.
--Stir in apples and nuts.
--Spoon into pans.

Bake: 2 Bread loaf pans: 1 1/2 hours -or-
5 Small loaves: 55 minutes -or-
8 Mini loaves: 35 minutes

Found this recipe in 2008, fondly referred to as "The Year of the Apple". Thanks to our friends Rebecca & Adam Billings.
This recipe made such a hit it replaced our carrot bread at Christmas.
