1 Cup Vegetable Oil
3/4 Cup Sugar
2 Eggs
1 tsp. Vanilla
1 1/2 Cups Flour
1 1/2 tsp. Baking Soda
1 1/2 tsp. Cinnamon
1/2 tsp. Salt
1 1/2 Cups Grated Carrots
1 1/2 Cups Chopped nuts
1/2 Cup Currants

Directions:
Directions:
Preheat oven to 350º.

Grate Carrots.
Grease & flour pans.

Use mixer to blend together the first 8 ingredients.

Stir in, by hand, the carrots, nuts and currants.

Bake for 30 minutes.

Makes: 1 Bead Loaf size -or-
3 Small loaves -or-
52 Mini muffins
