1/2 cup white sugar
1/2 cup packed brown sugar
3 tbsp. flour
1 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
7/8 cups thinly sliced peeled apples
1 tbsp. lemon juice
pastry for 9" double pie crust (see gramma hubbard's pie crust recipe)
1 tbsp. butter
1 egg white

Directions:
Directions:
In a small bowl, combine the sugars, flour and spices.; set aside.

In a large lowl, toss the apples with the lemon juice. Add the sugar mixture and toss well to coat the apples.

Line a 9" pie dish with 1/2 the pastry. Pour apple filling into crust and dot with butter. Top with the remaining pastry. Flute edges and slit top to allow the pie to breath while she is baking. Beat the egg whites until foamy - brush over pastry. Sprinkle sugar on top.

Bake at 375º for 35 minutes then increase the oven temperature to 400º and bake for about 10-15 minutes more, until apples are done.
