27-30 Italian prune plums
3 eggs
2½ cups flour
1¼ cup sugar
¼ lb. butter or margarine (1 Stick)
pinch salt
2½ tsp. baking powder
sugar and cinnamon for topping

Directions:
Directions:
Bring butter and eggs to room temperature. Add sugar to softened butter and mix. Beat eggs and add to the mixture. Mix baking powder, flour and salt and add to the mixture. Stir until blended. Dough will be stiff. Grease an 11x16 jelly roll pan. Pat the dough onto the pan to cover.
Cut plums and place side by side to cover the pan. (Cut half around and open like a book. Then cut into 4ths leaving the bottom skin intact.)
Sprinkle generously with sugar and cinnamon.
Bake 35-45 min. at 325 degrees.
Serve with whipped cream if desired.

This recipe is from Clara Wiesener and is from Germany. The plums are only available in early autumn and usually only at specialty grocers. I have never met anyone who didn't like this cake and it has been shared with family, friends, coworkers and others.
