Fish
6 to 8 mackerel steaks (approximently 1 & 1/2 inches thick)
1/4 c salt
2 T lemon juice or vinegar
Onion powder
Garlic powder
Emerils seasoning ( see recipe in Miscellaneous)
Mrs. Dash
Dill
Hickory chips for smoking, soaked in water for about 30 minutes

Dip
2 8oz pkg softened cream cheese
2 c + smoked fish, pulled off the bone ( bones, skin & dark meat discarded)
1 & 1/2 c mayonaise and 1/4 c spicey chipotle mayo
1 t onion powder
1/2 to 1 t liquid smoke
1 pkg ranch dip mix
Dill weed to taste
Parsley flakes to taste
1/2 T lemon juice

Clean mackerel & cut into steaks. Soak the steaks in water to cover, 1/4 c salt & 2 T lemon juice or vinegar for several hours.

Drizzle olive oil over both sides of the fish steaks and rub it into the steaks. Season the steaks with the onion powder, garlic powder, Emerils seasoning, Mrs. dash & dried dill.

Soak the hickory chips for about 30 minutes. Smoke the fish dry - do not add water to the water pan in the smoker. Smoke the fish until it's very dry - approximately 6 hours.

Dip
Add all dip ingredients to a food processor and mix well. Taste for seasonings. Add more salt & heat if needed. Serve fish dip with crackers.
