Directions:
Directions:
- Mix the dry ingredients in one bowl and the wet ingredients in a second bowl.
- Add the wet ingredients to the dry ingredients bowl and mix lightly. Having lumps in the batter is fine and preferred,
- DO NOT furiously mix the batter until it is smooth, use a light touch.
- OPTIONALLY put the batter in the fridge for 30 minutes or so (this is not required though).
- OPTIONALLY pick a set of ingredients from the EXTRAS section and add it to the batter.
- Heat up a pan or even better use one of those counter top electric griddles, the surface should be hot enough that water sputters on it when dripped but does not immediately evaporate. DO NOT ADD OIL OR BUTTER TO THE PAN / SURFACE
- Pour some batter out and marvel at your cooking prowess!
- Flip those fluffy beasts when you start to see bubbles forming on the surface
- They're all done when the bottom is golden brown
