2 ears sweet corn, shucked
1/2 pound linguine
1 Tbsp. Canola oil
1 small roma tomato, cored and cut into 1-inch pieces
1/2 red bell pepper, cored and sliced
2 green onions, sliced
2 tablespoons fresh lemon juice
3/4 Tbsp. dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 tsp. Garlic powder
Parmesan to taste

Bring a large pot of water to a boil. Add corn; cook for 3-4 minutes. Remove to a plate. Cut kernels from cob and set aside.

Return water to a boil and add linguine. Cook according to package directions. Drain.

Meanwhile, heat oil in a small skillet over medium heat. Add tomato, bell pepper, and green onions to skillet. Cook, stirring, for 3 minutes.

In a large bowl, toss pasta with tomato mixture, corn, lemon juice, parsley, garlic powder, salt and pepper. Gently toss and stir in Parmesan to taste. Serve warm.
