4-5 large potatoes (white, red or yellow -- not russet. Reds and yellows are usually smaller so use 4-10 depending on size)
1 egg for each 2 large potatoes --- or for each 3-4 small potatoes
2 cups Hellman's mayonnaise
1 heaping tablespoon sweet relish
1 teaspoon dry mustard
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon parsley flakes (optional)

Directions:
Put potatoes and eggs in pot of cold water to cover. Bring to boil; lower heat to simmer 10-15 minutes or until you can easily poke a skewer halfway through the largest potato. Drain in colander and set aside to cool to room temperature.
Peel and split eggs, separating whites from yolks. Mash whites with fork until fine. In separate bowl mash yolks until fine. Add mayo to yolks and whip together until creamy.
Peel then cut cooled potatoes into small cubes. Gently mix in egg whites, sweet relish, mustard powder, onion powder, and garlic powder.
Fold in gently the mayo/yolk mixture. Mix thoroughly, adding more mayo if needed.
Sprinkle with parsley.
