GRANNY'S STUFFED BANANA PEPPERS Recipe

Ingredients: 12 banana peppers w seeds removed 1 lb ground beef, browned (we add ground pork also) 2 c bread crumbs 1/2 c diced olives (opt) 1/2 c diced red pepper 1/4 c diced onion 1/2 c grated provolone cheese 2 beaten eggs (1 egg for thicker stuffing) Dash of italian seasoning, salt and pepper 1/4 cup olive oil 1 can tomato soup or jar of tomato sauce (for topping)

Directions:Mix ingredients except olive oil with hands, in a large bowl. Pour olive oil all over ingredients, mix again. Stuff peppers. Pack stuffing to 1/2 "of top of pepper bc it will expand. Grease or use Pam on bottom of 9x13 glass dish. Line up peppers and cover w soup or sauce. Sprinkle w italian seasoning and dash of salt. Bake at 375 F for 35 mins w foil on and remove from oven for a few mins. Drain excess water out of dish and bake 25 mins longer at same temp, w/out foil. Let cool for 5 mins, bc will be hot. ENJOY! |

Notes: Granny gave this recipe to us during our fall visit to PA after getting married, 9/98. We have great memories & have been using the recipe ever since. The peppers are excellent on hoagie buns w a dollop of sour cream too. U can also use hotter peppers, if desired.
