One package of lady fingers or eight inch sponge
1 pint of raspberries and or strawberries
Raspberry jam
1 box of strawberry jello
4 oz of sherry
2 oz of brandy
one pint whipping cream
2 oz of sugar
grated rind of one lemon
toasted almonds for decoration

Use a glass bowl, preferably one with a stand. The layers show off and it is prettier.

To make the bottom half of the trifle, simply mix the lady fingers, raspberry jam, raspberries, sherry and lemon rind and allow to soak for at least an hour.

Cut up the jello and sprinkle to make the next layer.

Make the topping by whipping the cream, sugar and brandy. You will have three layers.

You can opt to put another layer of cut up fresh fruit before the topping, making it four layers.

Cover with plastic, allow to set in the fridge 2 hours minimum, over night even better

Optional - Decorate with browned almonds slices.

This is a version of the traditional English Trifle made by my mother. She adds jello and uses less fresh fruit. She also doesn't make the "pudding" which a trifle normally calls for (milk, sugar, cream, egg yolks cooked over a double boiler). I like my Mom's simple version.
