1 C butter flavored shortening
1 C creamy peanut butter
1 C sugar
1 C brown sugar
1 tsp vanilla extract
3 eggs
3 C flour
2 tsp baking soda
1/4 tsp salt
filling:
1/2 C creamy peanut butter
3 C powdered sugar
1 tsp vanilla extract
5-6 T milk

Directions:
Directions:
Cream together shortening, peanut butter and sugars. Add vanilla, add eggs one at a time, beating well after each addition. Combine flour, baking soda and salt; add to creamed mixture.
Shape into 1 inch ball and place 2 inches apart on ungreased baking sheets. Flatten to 3/8 inch thickness with a fork in a crisscross fashion. Bake at 375º for 7-8 minutes or until golden. Cool on wire racks.
In mixing bowl, beat filling ingredients until smooth. Spread on bottom half of cooled cookie and sandwich together another cookie
