2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp Salt

3 eggs
3/4 cup veg. oil
3/4 cup buttermilk
2 cups sugar
2 tsp vanilla

2 cups finely grated carrots
3/4 cup crushed pineapple drained well
1/2 cup grated sweetened coconut
1 cup chopped walnuts

Preheat Oven- 350

Sift all dry ingredients together (except sugar) - Set aside
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt

Stir-together - Set aside
3 eggs
3/4 cup veg. oil
3/4 cup buttermilk
2 cups sugar
2 tsp vanilla

Mix together - Set aside
2 cups finely grated carrots
3/4 cup crushed pineapple drained well
3/4 cup grated sweetened coconut
1 cup chopped walnuts

Mix dry with the wet batter - then add the carrot mix

pour into 3 sm. loaf pans 8 x 4 x 2 1/2 in. or 2 med. loaf pans 8 1/2x4 1/2x2 1/2
