2 1/4 c all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 c sugar
1/2 c unsweetened apple sauce
2 eggs
1/3 c canola oil
2 very ripe bananas, mashed
1/2 c skim buttermilk
1/4 c semisweet chocolate chips

Preheat oven to 350 degrees.
Line or grease (18) 2 3/4" muffin tin.

1. Combine flour, powder and soda in a bowl.

2. In a mixing bowl, beat the sugar, eggs, applesauce and oil till frothy.

3. Alternately and on low speed, add to sugar mixture the bananas, buttermilk and the flour mixture till combined.

4. Fold in the chocolate chips.

5. Spoon the batter into the prepared muffin tin filling 2/3's full.

Bake until golden brown, 20-25 mins till a toothpick comes out clean.
Remove and cool on rack.

I usually make this in a bread loaf pan and bake a little longer,
