COOKIE CUPS:
1 c. sugar
1 large egg, room temperature
2 tsp. coconut extract
1 tsp. baking soda
2 c. all purpose flour
2 tsp corn starch
-OR- pre-made sugar cookie dough with coconut extract added

CHEESECAKE FILLING
1/4 c. pineapple juice
1 tsp corn starch
12 oz. cream cheese, room temperature
2 c. powered sugar
3 tbsp crushed pineapple, drained

WHIPPED CREAM
1/4 c. heavy whipping cream, cold
2 tbsp powered sugar
1/4 tsp coconut extract
pineapple for garnish
cherries for garnish

Spray mini cupcake pan with cookie spray. Preheat oven to 350º.
To make cookies, cream butter and sugar together for 3-4 minutes, until light and fluffy. Add the egg and coconut extract and beat until combined. Add the dry ingredients to the wet and mix until smooth. Dough will be thick.
Make balls about 2 tbsp and press into cupcake pan about 1/3-1/2 the way up the sides of each cup. Bake for 10-12 minutes or until edges are golden. Remove from oven and allow to cool.
Make the cream cheese filling. Combine the pineapple juice and cornstarch in a small bowl. Microwave in 10 second increments until thickened, about 20-30 seconds. Set aside to cool.
Beat the cream cheese and powered sugar together until smooth. Add the pineapple juice mixture and crushed pineapple and mix until combined. Scoop into cooled cookie cups.
Make the whipped topping. Add the heavy whipping cream, powered sugar and coconut extract to a mixer bowl fitted with a whisk attachment. Whisk on high until it reaches stiff peaks. Pipe whipped topping onto cookie cups. Top with pineapple and cherry for garnish. Store in refrigerator
