1 package of dried green peas
1 meaty ham bone
1 large onion, chopped
1t salt
1/2 t pepper
1/2 t dried thyme
1 bay leaf
1 cup chopped carrot
1 cup chopped celery

Directions:
Directions:
Rinse peas with cold water discarding any brown or discolored ones
Place in dutch oven and add water to cover by 2 inches
Bring to a boil and boil for 2 minutes
Cover and let stand for 2 to 4 hours until peas are softened
Drain and rinse, discarding water
Return peas to dutch oven and add 2 1/2 quarts of water, ham bone, onion, salt, pepper, thyme and bay leaf
Bring to a boil, reduce heat, cover and simmer for 1.5 hours, stirring occasionally
Remove ham bone, when cool enough to touch remove meat from ham bone and discard ham bone. Cut meat into bite size piece and return to dutch oven. Add carrots and celery and continue simmering uncovered for 45-60 minutes until soup reaches desired thickness and carrots and celery are tender.
Discard bay leaf.

Always make this with the ham bone leftover from Easter. Jeff (who doesn't like soup) threw it out one year...he never made that mistake again:) This is Brigid and Jamie's favorite. Freezes well. Always make sure I give them some to take home when I make it.
